Wicked Easy Banana Bread Bites

 

If banana bread is my love language, then these banana bread bites really speak to me. They are super easy, full of flavor, gluten free and refined sugar free. And you can eat the whole batch without even realizing.

Ingredients

1 banana, mashed

1 egg (if vegan, replace with 1 whole banana or 1 flax egg)

1 tbsp coconut oil

3 tbsp maple syrup

1/2 tsp vanilla extract

1/3 cup almond flour

1/3 cup coconut flour (or gluten free flour equivalent)

1/2 tsp baking soda

cinnamon, to taste

1/4 tsp nutmeg

Optional: chocolate chips, pecans, walnuts

Directions

  1. Preheat oven to 350 degrees.

  2. In a bowl, mash banana. Whisk in egg, coconut oil, maple syrup and vanilla. Mix until well combined.

  3. Add in almond flour, coconut flour, baking soda, cinnamon and nutmeg. Mix until smooth. Fold in nuts or chocolate or other desired add-ins.

  4. Scoop out cookies into two inch rounds. Using a fork, gently flatten the top of each round. Bake for 10-13 minutes until the bottoms are light brown in cookies but cookies are moist. Allow to cool.

For chocolate drizzle:

  1. In the microwave or on the stove, melt 3 tbsp coconut oil.

  2. Add 2 tbsp dutch cocoa powder and 1 tbsp maple syrup and whisk until smooth.

  3. Drizzle over cooled cookies for desired look and taste.
